Hatch Chili & Sausage Crockpot Stew

1 lb. Italian sausage (sweet or spicy, based on preference)

2 cups Hatch green chiles, roasted, peeled, and diced (or canned if not available)

1 medium onion, diced

3 cloves garlic, minced

4 medium potatoes, diced (Yukon Gold or red work best)

3 carrots, sliced

2 cups chicken or vegetable broth

1 can (15 oz) diced tomatoes (with juice)

1 can (15 oz) black beans, drained and rinsed

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp dried oregano

Salt and pepper to taste

Fresh cilantro, for garnish

Lime wedges for serving

Brown the Sausage: In a skillet over medium heat, brown the Italian sausage until it's cooked through and browned (about 5-7 minutes). Break it into small pieces as it cooks. Drain excess fat, if necessary.

    Prepare the Crockpot: On the bottom of your crockpot, layer the diced onions, garlic, potatoes, and carrots.

      Add the Sausage: Transfer the browned sausage into the crockpot on top of the vegetables.

        Incorporate the Rest: Add the roasted Hatch green chiles, diced tomatoes, black beans, chicken or vegetable broth, cumin, smoked paprika, oregano, salt, and pepper. Stir gently to combine.

          Set the Cook Time: Cover the crockpot and set it to low heat for 6-8 hours or high heat for 3-4 hours, until the vegetables are tender, and flavors meld together.

            Final Touches: Taste the stew and adjust seasoning, if necessary. If you prefer a thicker stew, you can blend a cup of the stew and stir it back into the pot to achieve your desired consistency.
