2 medium eggplants

1 can (5 oz) tuna in water, drained

1/4 cup Greek yogurt (or vegan alternative)

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 tablespoon capers, rinsed and chopped

1 tablespoon fresh parsley, chopped

1 garlic clove, minced

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Olive oil, for brushing

Fresh basil leaves, for garnishing

Prepare the Eggplants: Slice the eggplants into thick rounds, about 1-inch thick. Sprinkle them with salt and let them sit on paper towels for about 30 minutes to draw out excess moisture. Rinse and pat dry afterward.

    Make the Tuna Mixture: In a medium bowl, combine the drained tuna, Greek yogurt, Dijon mustard, lemon juice, capers, parsley, minced garlic, smoked paprika, salt, and pepper. Mix well until all ingredients are incorporated.

      Preheat Grill or Oven: Preheat your grill or oven to medium-high heat (around 400°F or 200°C).

        Grill the Eggplants: Brush both sides of the eggplant slices lightly with olive oil. Place the eggplant steaks on the grill or a baking sheet if using the oven. Grill for about 5-7 minutes on each side, or until they are tender and show grill marks.
