2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, minced

1 can (28 oz) crushed tomatoes

2 cups vegetable broth

1 teaspoon sugar

1 teaspoon dried basil

½ teaspoon salt

¼ teaspoon black pepper

½ cup heavy cream or coconut cream for a vegan option

½ cup fresh basil leaves, chopped (plus extra for garnish)

Optional: Croutons for topping

Instructions
 

Sauté Aromatics: In a large pot over medium heat, heat the olive oil. Add the chopped onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add Tomatoes & Seasonings: Pour in the crushed tomatoes, vegetable broth, sugar, dried basil, salt, and black pepper. Bring the mixture to a simmer and let it cook uncovered for about 20 minutes. Stir occasionally to prevent sticking.

      Blend the Soup: Remove the pot from heat. Using an immersion blender, carefully blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender and puree until smooth.

        Incorporate Cream: Return the blended soup to the pot over low heat. Stir in the heavy cream (or coconut cream) and fresh basil leaves. Allow the soup to warm up for another 5 minutes, ensuring not to bring it to a boil.

          Taste & Adjust: Give the soup a taste and adjust any seasonings if necessary.

            Serve: Ladle the creamy tomato basil soup into bowls. Garnish with extra fresh basil leaves and croutons if desired. Enjoy warm with crusty bread or a grilled cheese sandwich!
