1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup honey

1/4 cup soy sauce (low sodium recommended)

4 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

2 tablespoons sesame oil (or vegetable oil)

1 teaspoon red pepper flakes (optional, for heat)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

1 cup jasmine rice

1 3/4 cups water

Prepare the Marinade: In a bowl, combine honey, soy sauce, minced garlic, ginger, rice vinegar, and red pepper flakes (if using). Mix well.

    Marinate Chicken: Add the chicken pieces to the marinade, tossing to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

      Cook the Jasmine Rice: Rinse jasmine rice under cold water until the water runs clear to remove excess starch. In a saucepan, bring 1 3/4 cups of water to a boil. Add the rinsed rice and a pinch of salt. Cover, reduce heat to low, and simmer for 15-18 minutes until the rice is tender and water is absorbed. Remove from heat and let it rest, covered, for another 5 minutes.

        Cook the Chicken Bites: In a large skillet, heat the sesame oil over medium-high heat. Remove chicken from marinade (reserve the marinade) and add to the skillet in a single layer. Cook for 5-7 minutes, browning on all sides.

          Add the Sauce: Once the chicken is cooked through, stir in the reserved marinade. Bring to a simmer and let it thicken for about 3-5 minutes. Stir in the cornstarch slurry and allow it to bubble and thicken further for another minute.
