Ingredients

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons olive oil

2 tablespoons apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon black pepper

Salt to taste

Fresh parsley, chopped (for garnish)

Wooden skewers (soaked in water for 30 minutes)

Instructions

Prepare the Marinade: In a medium mixing bowl, whisk together honey, Dijon mustard, olive oil, apple cider vinegar, garlic powder, onion powder, smoked paprika, black pepper, and a pinch of salt until fully combined.

Marinate the Chicken: Place the chicken pieces in a large zip-top bag or a bowl. Pour the honey mustard marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the bowl and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor).

Preheat Your Grill: Preheat your grill to medium-high heat, around 375°F (190°C). If using a grill pan, heat it over medium-high on the stovetop.

Skewering the Chicken: Thread the marinated chicken pieces onto the soaked wooden skewers, leaving a little space between each piece to ensure even cooking.

Grill the Chicken Bites: Place the skewers on the grill and cook for about 12-15 minutes, turning occasionally, until the chicken is golden and cooked through (internal temperature should reach 165°F or 75°C). Brush any leftover marinade on the chicken during grilling for extra flavor.

Serve and Garnish: Once cooked, remove the skewers from the grill and let them rest for a couple of minutes. Transfer to a serving platter and garnish with chopped fresh parsley.

Enjoy! Serve warm with your choice of dipping sauces or alongside a salad for a delicious meal.
