1 cup raw pumpkin seeds (pepitas)

2 tablespoons honey

1 tablespoon olive oil

1/2 teaspoon sea salt

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg (optional)

1/4 teaspoon vanilla extract

Preheat the Oven: Preheat your oven to 350°F (175°C) to ensure it's ready for roasting.

    Prepare the Seeds: If you’re using seeds from a fresh pumpkin, rinse them under cool water to remove any pumpkin guts and strings. Pat them dry with a paper towel.

      Mix the Coating: In a mixing bowl, combine the honey, olive oil, sea salt, cinnamon, nutmeg (if using), and vanilla extract. Stir well until you achieve a smooth consistency.

        Combine Ingredients: Add the pumpkin seeds to the bowl with the honey mixture and stir until every seed is evenly coated.
