Ingredients

4 boneless, skinless chicken breasts

1/4 cup olive oil

Zest and juice of 2 fresh lemons

3 cloves garlic, minced

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 teaspoon honey

1 teaspoon Dijon mustard

1 teaspoon salt

1/2 teaspoon black pepper

Lemon slices (for grilling and garnish)

Fresh dill sprigs (for garnish)

Instructions

Prepare the Marinade: In a large bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, fresh dill, honey, Dijon mustard, salt, and pepper until combined.

Marinate the Chicken: Add the chicken breasts to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap or transfer the chicken to a resealable plastic bag. Refrigerate for at least 1 hour, or up to 4 hours for maximum flavor.

Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F).

Grill the Chicken: Remove the chicken from the marinade, shaking off any excess. Place the chicken breasts on the grill and cook for 6-7 minutes per side, or until an internal temperature of 165°F is reached. Optionally, during the last few minutes, place lemon slices on the grill to char slightly and enhance the flavor.

Rest the Chicken: Once cooked, remove the chicken from the grill and let it rest for about 5 minutes before slicing. This helps retain the juices.

Serve: Slice the grilled chicken and serve it garnished with fresh dill sprigs and charred lemon slices. Pair it with your choice of sides such as quinoa, roasted vegetables, or a fresh salad for a complete meal.
