Lemon Garlic Couscous Salad with Shrimp

1 cup couscous

1 ½ cups vegetable broth

1 lb shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

Juice and zest of 1 large lemon

1 cup cherry tomatoes, halved

½ cucumber, diced

½ red bell pepper, diced

¼ cup red onion, finely chopped

¼ cup fresh parsley, chopped

Salt and pepper, to taste

Optional: Crumbled feta cheese, for garnish

Cook the Couscous: In a medium saucepan, bring the vegetable broth to a boil. Once boiling, stir in the couscous, cover, and remove from heat. Let it sit for about 5 minutes, then fluff with a fork and transfer to a large bowl to cool.

    Prepare the Shrimp: In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant. Add the shrimp, season with salt and pepper, and cook for about 3-4 minutes until the shrimp turn pink and opaque. Squeeze half of the lemon juice over the shrimp while cooking. Remove from heat and let it cool slightly.

      Combine the Ingredients: In the bowl with the cooled couscous, add the cherry tomatoes, cucumber, red bell pepper, red onion, and parsley. Toss well to combine.

        Dress the Salad: Add the cooked shrimp to the salad mixture along with the remaining lemon juice, lemon zest, and additional salt and pepper to taste. Toss everything gently until evenly coated.
