Lemon Garlic Orzo Bowl

Ingredients
  

1 cup orzo pasta

2 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 large lemon

Juice of 1 large lemon

2 cups vegetable broth (or chicken broth)

1 cup cherry tomatoes, halved

1 cup baby spinach, packed

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Optional: Red pepper flakes for heat

Cook the Orzo: In a medium saucepan, bring the vegetable broth to a boil over medium heat. Stir in the orzo and reduce to a simmer. Cook for about 8-10 minutes or until the orzo is al dente. Drain any excess liquid and set aside.

    Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes, just until fragrant (be careful not to burn it).

      Add Tomatoes: Toss in the halved cherry tomatoes and cook for another 2-3 minutes until they start to soften.

        Combine Ingredients: Add the cooked orzo to the skillet, along with the lemon zest and lemon juice. Stir to combine all the ingredients thoroughly.

          Add Spinach: Fold in the baby spinach and cook for an additional 2-3 minutes until the spinach wilts.

            Finish with Cheese & Season: Remove from heat and add crumbled feta cheese and chopped parsley. Season with salt, pepper, and red pepper flakes if desired. Toss gently to combine.
