Lemon Garlic Roasted Cauliflower Steaks

Ingredients
  

1 large head of cauliflower

4 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prepare the Cauliflower:

    - Remove the leaves from the cauliflower and trim the stem slightly to create a flat base.

      - Place the cauliflower upright on a cutting board. Using a sharp knife, slice the cauliflower into 1-inch thick “steaks”, reserving any florets that fall off.

        Make the Marinade:

          - In a small bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, smoked paprika, ground cumin, salt, and pepper until well combined.

            Marinate the Cauliflower:

              - Place the cauliflower steaks in a large baking dish and pour the marinade over them, making sure each steak is well-coated. If there are any cauliflower florets, add them to the dish as well. Let marinate for at least 15 minutes.

                Preheat the Oven:

                  - Preheat your oven to 425°F (220°C).

                    Roast the Cauliflower:

                      - Line a baking sheet with parchment paper and arrange the marinated cauliflower steaks on the sheet.

                        - Roast in the preheated oven for 20-25 minutes, flipping halfway through cooking, until they are golden brown and tender. The edges should be slightly crispy.

                          Serve:

                            - Once cooked, remove the cauliflower steaks from the oven. Garnish with fresh chopped parsley and serve with lemon wedges on the side for an extra zing.
