Lemon Garlic Shrimp with Zucchini Noodles

1 lb large shrimp, peeled and deveined

4 medium zucchinis, spiralized into noodles

4 cloves garlic, minced

1/4 cup olive oil

Juice of 2 lemons

Zest of 1 lemon

1/2 tsp red pepper flakes (adjust to taste)

Salt and black pepper to taste

1/4 cup fresh parsley, chopped

Optional: grated Parmesan cheese for serving

Prepare the Zucchini Noodles: Use a spiralizer to turn the zucchinis into noodles. If you don’t have a spiralizer, you can use a vegetable peeler to make thin strips. Set the noodles aside.

    Marinate the Shrimp: In a bowl, combine the shrimp, minced garlic, olive oil, lemon juice, lemon zest, red pepper flakes, salt, and black pepper. Let it marinate for about 15-20 minutes to absorb the flavors.

      Cook the Shrimp: In a large skillet, heat a tablespoon of olive oil over medium-high heat. Once hot, add the marinated shrimp, cooking for about 2-3 minutes on each side or until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

        Sauté the Zucchini Noodles: In the same skillet, add another tablespoon of olive oil if needed. Toss in the zucchini noodles and cook for about 2-3 minutes until they are just tender but still al dente. Be careful not to overcook them to prevent sogginess.

          Combine and Serve: Return the shrimp to the skillet with the zucchini noodles. Add any remaining marinade and toss everything together for an additional minute. Remove from heat and sprinkle with fresh parsley.

            Plate and Enjoy: Serve the Lemon Garlic Shrimp over the zucchini noodles and, if desired, sprinkle with grated Parmesan cheese for added flavor.
