Lemon Herb Grilled Salmon with Veggies

Ingredients
  

4 salmon fillets (6 oz each)

2 lemons (one for juice, one for slices)

3 tbsp olive oil

2 cloves garlic, minced

1 tbsp fresh dill, chopped

1 tbsp fresh parsley, chopped

1 tsp fresh thyme, chopped (or 1/3 tsp dried thyme)

Salt and pepper to taste

1 zucchini, sliced into rounds

1 bell pepper (any color), sliced into strips

1 cup cherry tomatoes

1 red onion, cut into wedges

Optional: fresh herbs for garnish

Instructions
 

Marinate the Salmon: In a bowl, whisk together the olive oil, lemon juice, minced garlic, dill, parsley, thyme, salt, and pepper. Place the salmon fillets in a shallow dish or a resealable bag and pour the marinade over them. Make sure the salmon is well coated. Marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

    Prepare the Veggies: While the salmon marinates, prepare the veggies. In a large bowl, toss together the zucchini, bell pepper, cherry tomatoes, and red onion with a drizzle of olive oil, salt, and pepper.

      Preheat the Grill: Preheat your grill to medium-high heat. If using a grilling pan indoors, heat it on medium.

        Grill the Veggies: On a grilling basket or directly on the grill, add the seasoned veggies. Grill for about 5-7 minutes, turning occasionally until they are tender and slightly charred. Remove and set aside.

          Grill the Salmon: Once the grill is hot, place the marinated salmon fillets skin-side down on the grill. Add lemon slices on top of the fillets. Grill for about 4-5 minutes per side, depending on the thickness of the fillets. The salmon should be cooked to an internal temperature of 145°F and flake easily with a fork.

            Serve: Transfer the grilled salmon and veggies to a serving platter. You can garnish with additional fresh herbs if desired. Serve with extra lemon wedges on the side.
