Ingredients
  

4 salmon fillets (6 oz each)

3 tablespoons olive oil

1 lemon (juiced and zested)

3 cloves garlic (minced)

2 tablespoons fresh dill (chopped)

2 tablespoons fresh parsley (chopped)

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon smoked paprika

1 cup cherry tomatoes (halved)

1 zucchini (sliced)

1 bell pepper (sliced)

1 red onion (cut into wedges)

1 tablespoon balsamic vinegar

Instructions
 

Marinate the Salmon: In a bowl, mix together the olive oil, lemon juice and zest, minced garlic, dill, parsley, salt, pepper, and smoked paprika. Place the salmon fillets in a shallow dish and pour the marinade over them. Let marinate in the refrigerator for at least 30 minutes.

    Prepare the Veggies: In a separate bowl, combine the cherry tomatoes, zucchini, bell pepper, and red onion. Drizzle with olive oil and balsamic vinegar, and season with salt and pepper. Toss until all the veggies are coated evenly.

      Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan indoors, heat it over medium heat and brush it lightly with olive oil.
