Ingredients

4 salmon fillets (6 oz each)

2 tablespoons olive oil

2 tablespoons fresh lemon juice

Zest of 1 lemon

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon fresh parsley, chopped (plus extra for garnish)

Salt and pepper, to taste

Lemon slices, for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Marinade: In a small bowl, whisk together the olive oil, fresh lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper until well combined.

Marinate the Salmon: Place the salmon fillets on a baking sheet lined with parchment paper. Brush both sides of the fillets generously with the lemon herb marinade. Allow it to marinate for at least 15 minutes (up to 1 hour in the refrigerator for deeper flavor).

Arrange for Baking: Arrange the salmon fillets skin-side down on the prepared baking sheet, ensuring there is ample space between each fillet for even cooking.

Roast the Salmon: Roast the salmon in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).

Garnish and Serve: Once cooked, remove the salmon from the oven. Garnish with freshly chopped parsley and serve with lemon slices on the side for extra zest. Pair with your favorite vegetables or a light salad.
