1 lb pork tenderloin, trimmed and cut into 1-inch thick medallions

1/4 cup pure maple syrup

2 tablespoons Dijon mustard

1 tablespoon soy sauce

2 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1/2 teaspoon black pepper

1 tablespoon olive oil

Salt to taste

Fresh rosemary sprigs for garnish (optional)

Instructions
 

Marinate the Medallions: In a medium bowl, whisk together the maple syrup, Dijon mustard, soy sauce, minced garlic, chopped rosemary, and black pepper. Add salt to taste. Place the pork medallions in a resealable plastic bag or shallow dish, and pour the marinade over them. Seal or cover, and marinate in the refrigerator for at least 30 minutes (up to 2 hours for enhanced flavor).

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Sear the Medallions: Heat the olive oil in a large oven-safe skillet over medium-high heat. Remove the medallions from the marinade (keeping the marinade for later) and sear them in the skillet for about 2-3 minutes per side, until golden brown.

        Add the Marinade: Once the medallions are browned, pour the reserved marinade over them in the skillet. Bring the marinade to a simmer and let it cook for about 2 minutes.

          Bake: Transfer the skillet to the preheated oven and bake for an additional 10-15 minutes, or until the internal temperature of the pork reaches 145°F (63°C). Remove from the oven, and allow the pork to rest for 5 minutes before serving.

            Serve: Slice the medallions and drizzle any remaining glaze from the skillet over the top. Garnish with fresh rosemary sprigs if desired, and serve with your favorite sides such as roasted vegetables and mashed potatoes.
