Maple Glazed Pumpkin Donuts

For the Donuts:

1 cup canned pumpkin puree (not pumpkin pie filling)

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup vegetable oil

2 large eggs

1/2 tsp vanilla extract

1 1/2 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 tsp ground ginger

1/2 tsp salt

For the Maple Glaze:

1 cup powdered sugar

3-4 tbsp maple syrup

1-2 tbsp milk (or more for desired consistency)

A pinch of salt

Preheat your oven to 350°F (175°C). Grease a donut pan with cooking spray or lightly with oil.

    In a large mixing bowl, combine the canned pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until smooth and well blended.

      In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt.

        Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Avoid overmixing to ensure the donuts are light and fluffy.

          Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full. You can also use a piping bag for a neater application.

            Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean. Let the donuts cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

              While the donuts cool, prepare the maple glaze. In a medium bowl, whisk together the powdered sugar, maple syrup, milk, and a pinch of salt until smooth. Adjust the thickness by adding more milk if necessary; it should be pourable but not too runny.

                Once the donuts are completely cooled, dip the tops into the maple glaze, allowing the excess to drip off. Place them back on the wire rack to let the glaze set.
