Maple Pecan Cinnamon Rolls

4 cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

½ cup warm milk (110°F)

½ cup granulated sugar

¼ cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1 teaspoon salt

¾ cup brown sugar, packed

2 tablespoons ground cinnamon

½ cup chopped pecans

½ cup chopped walnuts (optional)

½ cup maple syrup (for glaze)

1 cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)

Instructions
 

Activate the yeast: In a small bowl, combine the warm milk and granulated sugar, stirring until dissolved. Sprinkle the yeast on top and let it sit for about 5-10 minutes, until frothy.

    Prepare the dough: In a large mixing bowl, whisk together the flour and salt. Make a well in the center and add the melted butter, eggs, vanilla extract, and the frothy yeast mixture. Mix until a dough forms.

      Knead the dough: Transfer the dough to a lightly floured surface and knead for about 5-7 minutes, until smooth and elastic. Place the dough in a lightly greased bowl, cover with a kitchen towel, and let it rise in a warm place until it doubles in size (about 1 hour).

        Make the filling: In a small bowl, combine the brown sugar, ground cinnamon, and chopped pecans (and walnuts if using). Mix well and set aside.

          Roll out the dough: Once the dough has risen, punch it down and transfer it to a floured surface. Roll out into a large rectangle (about 16x24 inches) with a rolling pin.

            Add the filling: Spread the filling mixture evenly over the surface of the rolled-out dough, leaving a small border around the edges.

              Roll the dough: Starting from the longer edge, tightly roll the dough into a log. Pinch the seam to seal and cut into 12 equal pieces.
