Mini Air Fryer Egg Bites

Easily made in an air fryer, they maintain their light and airy texture while being quick to prepare. Packed with protein and rich in flavor, these versatile bites can include cheese, veggies, or meats, making them a delightful meal any time of day.

Ingredients
  

6 large eggs

1/2 cup shredded cheese (cheddar, pepper jack, or your favorite blend)

1/4 cup milk or cream

1/4 cup cooked and crumbled bacon or sausage (optional)

1/4 cup chopped bell peppers (red, yellow, or green)

1/4 cup chopped spinach or kale

Salt and pepper, to taste

Fresh herbs (chives or parsley), for garnish

Instructions
 

Prepare the Air Fryer: Preheat your air fryer to 275°F (135°C). This will ensure even cooking for the egg bites.

    Mix Eggs and Dairy: In a large bowl, whisk together the eggs, milk or cream, salt, and pepper until well combined and a bit frothy.

      Add Ingredients: Fold in the shredded cheese, cooked and crumbled bacon or sausage (if using), bell peppers, and spinach. Mix until evenly distributed.

        Prepare the Molds: Lightly grease silicone mold cups with nonstick spray or oil. If you don’t have silicone molds, use small ramekins that fit in your air fryer.

          Fill Molds: Carefully pour the egg mixture into each mold, filling them about 2/3 full to allow for expansion during cooking.

            Cook in the Air Fryer: Place the filled molds in the air fryer basket and cook at 275°F (135°C) for 12-15 minutes, or until the egg bites are set in the center and slightly puffed.

              Check for Doneness: Insert a toothpick into the center of an egg bite. If it comes out clean, they're ready! If not, continue to cook in 1-2 minute increments until done.

                Cool and Serve: Carefully remove the molds from the air fryer and let them cool for a couple of minutes. Run a knife around the edges to help release the egg bites from the molds.

                  Garnish and Enjoy: Serve warm, garnished with fresh herbs. Perfect for breakfast or a healthy snack!
