For the tart crust:

1 cup almond flour

2 tablespoons coconut oil (melted)

2 tablespoons honey or maple syrup

1/4 teaspoon salt

For the berry filling:

1 cup mixed berries (strawberries, blueberries, raspberries)

1 tablespoon honey or maple syrup (adjust to taste)

1 tablespoon lemon juice

1/2 teaspoon vanilla extract

For the ice cream:

2 cups vanilla ice cream (store-bought or homemade)

For garnish:

Extra mixed berries

Fresh mint leaves (optional)

Instructions
 

Prepare the Tart Crust:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine the almond flour, melted coconut oil, honey (or maple syrup), and salt. Stir until a dough forms.

        - Press the dough evenly into the bottom and up the sides of a muffin tin to create mini tart shells.

          - Bake in the preheated oven for 10-12 minutes, or until golden brown. Allow to cool completely.

            Make the Berry Filling:

              - In a small bowl, mix together the berries, honey (or maple syrup), lemon juice, and vanilla extract. Gently mash the berries with a fork to release some of their juices while still keeping them chunky. Set aside.

                Assemble the Tarts:

                  - Once the tart crusts are cooled, remove them from the muffin tin. Spoon a layer of the berry filling into each tart shell, filling them about halfway.

                    Add Ice Cream:

                      - Gently scoop vanilla ice cream on top of the berry filling, filling each tart to the brim. You can create swirls with a small spatula to incorporate the berries slightly into the ice cream.

                        Freeze:

                          - Place the assembled tarts back into the freezer for 1-2 hours to firm up.

                            Serve:

                              - Once set, remove from the freezer and let them sit at room temperature for 5 minutes before serving. Garnish with extra mixed berries and mint leaves, if desired.
