Ingredients

1 cup fresh corn kernels (or canned, drained)

1 cup all-purpose flour

1 cup shredded sharp cheddar cheese

1/2 cup milk

2 large eggs, beaten

2 green onions, finely chopped

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp garlic powder

1/2 tsp paprika

Salt and pepper to taste

Vegetable oil for frying

Optional: sour cream or salsa for serving

Instructions

Prepare the Batter: In a large mixing bowl, combine the flour, baking powder, baking soda, garlic powder, paprika, salt, and pepper. Whisk together to ensure even distribution of the dry ingredients.

Add Wet Ingredients: In another bowl, mix the beaten eggs and milk. Gradually add this wet mixture to the dry ingredients, stirring until just combined. Do not overmix; the batter should remain slightly lumpy.

Incorporate Add-Ins: Fold in the corn kernels, shredded cheddar cheese, and chopped green onions until evenly distributed throughout the batter.

Preheat the Pan: Heat a skillet or frying pan over medium heat and add enough vegetable oil to coat the bottom, about 1/4 inch deep. Allow the oil to get hot but not smoking.

Form the Fritters: Use a tablespoon or small ice cream scoop to drop spoonfuls of the batter into the hot oil, spacing them about 2 inches apart. Flatten them slightly with the back of the spoon to form small cakes.

Fry the Fritters: Cook the fritters for about 3-4 minutes on each side or until they are golden brown and crispy. You may need to adjust the heat to ensure they cook evenly without burning.

Drain Excess Oil: Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil. Repeat with the remaining batter, adding more oil as needed.

Serve: Enjoy the fritters warm with a side of sour cream or salsa for dipping. They make a perfect appetizer or snack!
