Mini Chicken Avocado Rice Wraps

1 cup cooked rice (jasmine or basmati)

1 cup shredded cooked chicken (rotisserie chicken works great)

1 ripe avocado, diced

½ cup cherry tomatoes, quartered

¼ cup fresh cilantro, chopped

¼ cup Greek yogurt (or sour cream)

1 tbsp lime juice

1 tsp chili powder

Salt and pepper to taste

6 small rice paper wrappers (or mini tortillas)

Optional: Sliced jalapeños for heat

Prepare the Filling: In a mixing bowl, combine the cooked rice, shredded chicken, diced avocado, cherry tomatoes, and chopped cilantro. Drizzle lime juice over the mixture, sprinkle in the chili powder, and season with salt and pepper. Gently toss everything together until well mixed.

    Prepare the Rice Paper Wrappers: If using rice paper, fill a wide, shallow dish with warm water. Dip each rice paper wrapper in the water for about 10-15 seconds until it softens. Be careful not to soak them too long as they will become too pliable.

      Assemble the Wraps: Lay the softened rice paper on a clean surface. Place a generous spoonful of the chicken and avocado mixture on the lower third of the wrapper. Add a dollop of Greek yogurt for creaminess. If you like heat, add a few slices of jalapeño.

        Fold and Roll: Start by folding the bottom of the wrapper over the filling. Then, fold the sides in toward the center and roll it up tightly from the bottom to the top. Repeat this process with the remaining wrappers and filling.

          Serve: Place the completed wraps on a platter and garnish with any extra cilantro or lime wedges on the side. Serve with an additional bowl of Greek yogurt or a spicy dipping sauce, if desired.
