Ingredients
  

1 cup dried chickpeas (soaked overnight)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup fresh parsley, chopped

1 cup fresh cilantro, chopped

1 tsp ground cumin

1 tsp ground coriander

½ tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

1 tsp baking powder

3-4 tbsp all-purpose flour (more if needed)

Oil for frying

1 head of butter or romaine lettuce, leaves separated

Optional: Tahini sauce or yogurt dressing for drizzling

Instructions
 

Prepare Chickpeas: Drain and rinse the soaked chickpeas. Place them in a food processor along with the chopped onion, minced garlic, parsley, cilantro, cumin, coriander, cayenne pepper, salt, and pepper. Pulse until the mixture is coarsely ground but not pureed.

    Mix Ingredients: Transfer the mixture to a large bowl. Stir in the baking powder and gradually add flour, mixing until the mixture holds together but is not overly dry. It should be pliable enough to shape into small balls without falling apart.

      Shape Falafels: Using your hands, shape the mixture into small, round balls or patties, approximately the size of a golf ball.

        Heat Oil: In a deep frying pan, heat about 1-2 inches of oil over medium heat. To check if it's ready, drop a small piece of the falafel mixture into the hot oil; if it sizzles immediately, the oil is ready for frying.

          Fry Falafels: Carefully add the shaped falafels to the hot oil in batches, being sure not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until they are golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

            Assemble Lettuce Cups: While the falafels are frying, prepare your lettuce cups by gently rinsing and patting the leaves dry.

              Serve: Place 1-2 crispy falafel balls in each lettuce leaf. Drizzle with tahini sauce or yogurt dressing, if desired, and garnish with extra chopped parsley or cilantro for freshness.
