Ingredients
  

6 large egg whites

1 ripe avocado, mashed

1/2 cup diced bell pepper (red or yellow)

1/4 cup shredded cheese (cheddar or mozzarella)

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon salt

1/8 teaspoon black pepper

1 tablespoon olive oil (for greasing)

Optional toppings: chopped fresh herbs (cilantro or parsley), diced tomatoes, or sliced jalapeños

Instructions
 

Preheat your oven to 350°F (175°C). Lightly grease a muffin tin with olive oil to prevent sticking.

    In a mixing bowl, combine the mashed avocado, diced bell pepper, garlic powder, onion powder, salt, and black pepper. Mix until well combined.

      In another bowl, whisk the egg whites until frothy but not stiff. This will help to create a light texture in the muffin rounds.

        Gently fold the egg whites into the avocado mixture until just combined, being careful not to deflate the egg whites too much.

          Spoon the mixture evenly into the prepared muffin tins, filling each cavity about 3/4 full.

            Sprinkle shredded cheese on top of each muffin round for added flavor and a lovely golden finish.

              Bake in the preheated oven for 15-18 minutes, or until the muffins are set in the center and the tops are lightly golden.

                Remove from the oven and allow to cool for a few minutes in the pan before gently lifting them out.

                  Top with optional garnishes such as fresh herbs, diced tomatoes, or sliced jalapeños for an extra kick if desired.

                    Serve warm or at room temperature as a healthy breakfast option, snack, or appetizer.
