Ingredients
  

4 mini sweet peppers (red, yellow, or orange)

4 large eggs

1/4 cup shredded cheese (cheddar, mozzarella, or feta)

2 tablespoons fresh chives, chopped

2 tablespoons olive oil

1/2 teaspoon garlic powder

Salt and pepper to taste

Optional toppings: diced avocado, salsa, or hot sauce

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the mini peppers in half lengthwise and remove the seeds. Place them cut-side up on a baking sheet lined with parchment paper.

      Season the Peppers: Drizzle olive oil over the peppers and sprinkle garlic powder, salt, and pepper. Toss to coat evenly.

        Roast the Peppers: Roast the peppers in the preheated oven for about 15-20 minutes, or until they start to soften.

          Add the Eggs: Remove the peppers from the oven and crack an egg into each half.

            Sprinkle Cheese and Chives: Top each egg with shredded cheese and chopped chives.

              Bake: Return the peppers to the oven and bake for an additional 10-12 minutes, until the egg whites are set and the yolks are cooked to your liking.

                Serve: Carefully remove the baking sheet from the oven. Serve the breakfast boats warm, topped with optional diced avocado, salsa, or a drizzle of hot sauce for extra flavor.
