6 small flour tortillas

1 cup fresh spinach, chopped

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 tablespoon olive oil

1/2 cup cherry tomatoes, halved (for garnish)

Fresh basil leaves, for garnish

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Tortilla Cups: Lightly brush both sides of each tortilla with olive oil. Using a muffin tin, press each tortilla into the cups to create a bowl shape. Bake in the preheated oven for about 8-10 minutes until they are slightly golden and crispy.

      Make the Filling: In a mixing bowl, combine the ricotta cheese, chopped spinach, grated Parmesan cheese, garlic powder, red pepper flakes (if using), salt, and pepper. Mix well until all ingredients are evenly blended.

        Fill the Tortilla Cups: Once the tortilla cups are crisped and have cooled slightly, remove them from the oven. Spoon the spinach and ricotta mixture into each tortilla cup, filling them generously.
