Ingredients

1 lb ground turkey

1 cup finely diced bell peppers (red, yellow, or orange)

1 cup finely diced zucchini

1 cup finely chopped spinach

1/2 cup onion, finely chopped

2 cloves garlic, minced

1 tsp dried oregano

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

1 tablespoon olive oil

1 package (8-10) refrigerated biscuit dough

1 cup shredded cheese (cheddar or mozzarella)

Fresh herbs (like parsley or basil), for garnish

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Sauté the Veggies: In a skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.

Cook the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook for about 5 minutes, until turkey is browned, stirring occasionally.

Add Veggies and Seasonings: Stir in the diced bell peppers, zucchini, spinach, oregano, paprika, salt, and black pepper. Cook for another 3-4 minutes until the vegetables are tender and the turkey is fully cooked. Remove from heat and set aside.

Prepare the Biscuit Dough: Open the package of biscuit dough and separate the biscuits. Use a rolling pin to flatten each biscuit to about 1/4 inch thick.

Assemble the Stacks: On half of the flattened biscuits, spoon a generous amount of the turkey and veggie mixture. Sprinkle shredded cheese over the mixture, then top with another flattened biscuit to create a stack.

Bake the Stacks: Place the assembled stacks on the prepared baking sheet. Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown and cooked through.

Garnish and Serve: Remove the biscuit stacks from the oven and let them cool slightly. Garnish with fresh herbs before serving. Enjoy your delicious Mini Turkey and Veggie Biscuit Stacks!
