1 cup cooked quinoa

1/2 cup grated zucchini (squeezed of excess moisture)

1/2 cup finely chopped bell pepper (any color)

1/2 cup canned black beans, rinsed and drained

1/4 cup corn kernels (fresh, frozen, or canned)

1/4 cup grated carrot

1/4 cup chopped green onions

1/4 cup shredded cheese (cheddar or mozzarella)

2 large eggs

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

1/4 tsp smoked paprika (optional)

Olive oil spray (for greasing)

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a mini muffin tin with paper liners or lightly grease with olive oil spray.

    Mix Ingredients: In a large mixing bowl, combine the cooked quinoa, grated zucchini, chopped bell pepper, black beans, corn, grated carrot, and green onions. Stir well to incorporate all the ingredients.

      Add Cheese and Eggs: Add the shredded cheese, eggs, garlic powder, onion powder, smoked paprika (if using), salt, and pepper to the mixture. Mix until all ingredients are well combined and the mixture starts to hold together.

        Portion the Mixture: Using a spoon or cookie scoop, fill each muffin tin well with the quinoa mixture, packing them down slightly to ensure they hold their shape.

          Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the bites are golden brown on the top and firm to the touch.

            Cool and Serve: Allow the mini veggie quinoa bites to cool for a few minutes in the muffin tin before gently removing them. Serve warm or at room temperature with your favorite dipping sauce, such as a spicy salsa or a creamy yogurt sauce.
