Ingredients

1 cup almond flour

1/2 cup rolled oats (certified gluten-free if needed)

1/2 cup unsweetened shredded coconut

1/4 cup maple syrup

1/4 cup almond butter (or any nut butter of choice)

1 teaspoon vanilla extract

1/4 teaspoon salt

1 cup dried blueberries (or fresh if available)

1/4 cup chopped walnuts (optional)

1/4 cup dark chocolate chips (optional, for topping)

Instructions

Prepare the Base: In a large mixing bowl, combine the almond flour, rolled oats, and shredded coconut. Mix well until all the dry ingredients are evenly distributed.

Add Wet Ingredients: In a separate bowl, whisk together the maple syrup, almond butter, vanilla extract, and salt until smooth.

Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Fold gently with a spatula until everything is well combined. If the mixture feels a bit dry, add a splash of water or more almond butter to achieve a sticky consistency.

Incorporate Blueberries and Walnuts: Gently fold in the dried blueberries and walnuts (if using) until evenly dispersed throughout the mixture.

Press into the Pan: Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal. Transfer the mixture to the dish and press it down firmly with your fingers or the back of a spatula to create an even layer.

Chill and Set: Place the baking dish in the refrigerator for at least 2 hours to allow the bars to firm up.

Optional Topping: If desired, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Drizzle over the chilled bars before slicing for added decadence.

Slice and Serve: Once set, remove the bars from the pan using the parchment overhang. Place on a cutting board and slice into squares or rectangles.

Store: Store the bars in an airtight container in the refrigerator for up to one week, or freeze them for longer storage.
