No-Bake Cereal S’mores Bars

With a combination of puffed rice cereal, graham cracker crumbs, mini marshmallows, and chocolate, each bar is a crunchy, gooey indulgence. Ingredients
  

3 cups of puffed rice cereal

1 ½ cups of graham cracker crumbs

1 cup of mini marshmallows

1 cup of semi-sweet chocolate chips

½ cup of creamy peanut butter (or almond butter for a twist)

¼ cup of honey (or maple syrup for a vegan option)

1 teaspoon of vanilla extract

A pinch of salt

Extra mini marshmallows and chocolate chips for topping (optional)

Instructions
 

Prepare the Pan: Line a 9x9 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal later.

    Mix Dry Ingredients: In a large bowl, combine the puffed rice cereal, graham cracker crumbs, and mini marshmallows. Mix well until evenly combined.

      Melt the Wet Ingredients: In a medium saucepan over low heat, combine the chocolate chips, peanut butter, honey, vanilla extract, and salt. Stir continuously until the mixture is smooth and fully melted. Remove from heat.

        Combine Mixtures: Pour the melted chocolate mixture over the dry cereal mixture. Using a spatula, fold everything together until the cereal and marshmallows are thoroughly coated.

          Spread in Baking Dish: Spoon the mixture into the prepared baking dish. Use the spatula to press the mixture down firmly and evenly into the pan, making sure it's compact. For an extra touch, sprinkle some mini marshmallows and chocolate chips on top and press them in gently.

            Chill: Place the baking dish in the refrigerator for about 1-2 hours, or until the bars are set and firm.

              Cut and Serve: Once set, lift the mixture out of the pan using the parchment paper overhang. Place on a cutting board and cut into squares or bars as desired.

                Store: Keep any leftovers in an airtight container at room temperature for up to one week.
