2 cups fresh or frozen cherries, pitted and halved

1 tablespoon lemon juice

2 tablespoons granulated sugar (adjust based on sweetness preference)

1 teaspoon vanilla extract

1 cup heavy cream

¼ cup powdered sugar

1 teaspoon vanilla extract (for whipped cream)

1 cup crushed graham crackers (or digestive biscuits)

½ cup cream cheese, softened

½ cup plain Greek yogurt

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Cherry Filling:

    - In a medium bowl, combine the pitted cherries, lemon juice, granulated sugar, and 1 teaspoon of vanilla extract. Stir gently until the cherries are well-coated. If using frozen cherries, let the mixture sit for about 10-15 minutes to thaw slightly and create a syrup.

      Make the Whipped Cream:

        - In a separate bowl, use an electric mixer to beat the heavy cream with the powdered sugar and 1 teaspoon of vanilla extract until soft peaks form. Be careful not to overwhip; you want a light and fluffy consistency.

          Prepare the Cream Cheese Mixture:

            - In another bowl, beat the softened cream cheese with the Greek yogurt until smooth and creamy. You can use a hand mixer or whisk vigorously by hand until there are no lumps. You may adjust sweetness with a little more powdered sugar if desired.

              Assemble the Parfaits:

                - In your serving glasses or cups, start with a layer of the crushed graham crackers. Use about 2 tablespoons for each glass.

                  - Next, add a generous layer of the cream cheese mixture, around 3 tablespoons.

                    - Follow with a layer of the cherry mixture, spooning about 2 tablespoons over the cream cheese layer.

                      - Top with a layer of whipped cream, about 2 tablespoons per glass.

                        - Repeat the layers until the glasses are filled, finishing with a dollop of whipped cream and a few cherries on top.

                          Chill and Serve:

                            - Cover the parfaits with plastic wrap and refrigerate for at least 2 hours, allowing the flavors to meld and the layers to set.

                              - Before serving, garnish with fresh mint leaves if desired.
