Ingredients

1 cup all-purpose flour (heat-treated)

½ cup unsalted butter, softened

¾ cup brown sugar, packed

¼ cup granulated sugar

2 teaspoons vanilla extract

2 tablespoons milk (or dairy-free alternative)

½ cup mini chocolate chips

¼ cup chopped nuts (optional, such as walnuts or pecans)

A pinch of sea salt

Instructions

Prepare the Flour: Start by heat-treating the flour to ensure it's safe to eat raw. Spread the flour on a baking sheet and bake at 350°F (175°C) for 5–7 minutes, stirring halfway through to prevent browning. Let it cool.

Cream Butter and Sugars: In a mixing bowl, beat together the softened butter, brown sugar, and granulated sugar using a handheld mixer or a stand mixer on medium speed until the mixture is light and fluffy (about 2-3 minutes).

Add Vanilla and Milk: Incorporate the vanilla extract and milk into the butter mixture, mixing until well combined.

Combine Dry Ingredients: Gradually add the cooled heat-treated flour and a pinch of sea salt to the butter mixture. Mix on low speed until just combined, taking care not to over mix.

Fold in Add-Ins: Gently fold in the mini chocolate chips and chopped nuts (if using) into the dough using a spatula until evenly distributed.

Form Balls: Scoop out tablespoon-sized portions of the dough and roll them into balls using your hands. Place them on a baking sheet lined with parchment paper.

Chill: Refrigerate the cookie dough balls for at least 30 minutes to help them firm up.

Serve & Store: Enjoy your no-bake cookie dough balls straight from the fridge! Store any leftovers in an airtight container in the refrigerator for up to one week.
