2 cups fresh strawberries, hulled and chopped

1 cup Greek yogurt (vanilla flavored)

1 cup coconut cream (chilled)

1/2 cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1 cup granola or crushed graham crackers (for crust)

1/4 cup melted coconut oil (for crust)

A pinch of sea salt

Instructions
 

Prepare the Crust: In a medium bowl, combine the granola or crushed graham crackers, melted coconut oil, and a pinch of sea salt. Mix until the crumbs are coated with oil and slightly wet. Press this mixture firmly into the bottom of an 8x8-inch baking dish to form an even layer.

    Blend the Strawberry Mixture: In a blender or food processor, combine the chopped strawberries, Greek yogurt, coconut cream, honey (or maple syrup), and vanilla extract. Blend until smooth. Taste and adjust sweetness if needed.

      Layer the Mixture: Pour the strawberry mixture over the prepared crust, spreading it evenly with a spatula.

        Freeze: Cover the baking dish with plastic wrap or aluminum foil and place it in the freezer for at least 4 hours or until completely set.

          Serve: Once frozen, remove the bars from the dish using the edges of the lining (if using) and cut into squares or bars.

              Store: Leftover bars can be stored in an airtight container in the freezer for up to 2 weeks.
