1 cup canned chickpeas, rinsed and drained

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1/2 cup kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

3 tbsp extra virgin olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

Salt and pepper to taste

Optional: Pita bread, for serving

Instructions
 

In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, kalamata olives, feta cheese, parsley, and mint.

    In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper to create a simple dressing.
