One-Pan Cheesy Chicken and Broccoli Bake

2 cups cooked chicken, shredded or diced

2 cups fresh broccoli florets (or frozen, thawed)

1 cup uncooked quinoa (or rice)

1 ½ cups chicken broth (or vegetable broth)

1 cup shredded cheddar cheese

½ cup cream cheese, softened

½ cup sour cream (or Greek yogurt)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon black pepper

½ teaspoon salt (adjust to taste)

¼ teaspoon red pepper flakes (optional, for a kick)

½ cup breadcrumbs (optional, for topping)

Fresh parsley (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare the Pan: In a large oven-safe skillet or a 9x13 inch baking dish, combine the uncooked quinoa (or rice), chicken broth, garlic powder, onion powder, black pepper, and salt. Stir until well mixed.

      Add Chicken and Broccoli: Layer the cooked chicken and broccoli florets over the quinoa mixture. Press them gently into the liquid to ensure they cook evenly.

        Make the Cheesy Sauce: In a medium bowl, combine the softened cream cheese, sour cream, and half of the shredded cheddar cheese. Mix until smooth and creamy.

          Combine Everything: Spoon the cheesy mixture over the chicken and broccoli layer. Use a spatula to spread it out evenly.

            Top with Cheese & Breadcrumbs: Sprinkle the remaining cheddar cheese evenly over the top. If you like a crunchy topping, add breadcrumbs evenly over the cheese layer. Sprinkle red pepper flakes for an extra kick if desired.

              Bake: Cover the skillet or baking dish with aluminum foil (to prevent sticking, spray the foil with cooking spray). Bake in the preheated oven for 30 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and lightly golden.

                Garnish and Serve: Once out of the oven, let it sit for about 5 minutes. Garnish with fresh parsley before serving.
