2 boneless, skinless chicken breasts

8 oz (225 g) pasta (penne or fusilli works well)

1 cup chicken broth

1 cup heavy cream

1/2 cup basil pesto (store-bought or homemade)

1 cup cherry tomatoes, halved

1 cup spinach leaves

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper, to taste

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

Fresh basil leaves, for garnish

Extra Parmesan cheese, for serving

Prepare the Chicken: Season the chicken breasts generously with salt, pepper, and Italian seasoning. In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and sauté for about 6-7 minutes on each side, or until cooked through and golden brown. Remove the chicken from the skillet and set aside.

    Cook the Pasta: In the same skillet, add the garlic and sauté for about 1 minute until fragrant. Then, stir in the pasta, chicken broth, and heavy cream. Bring to a simmer, cover, and cook according to the pasta package instructions, usually about 10-12 minutes, stirring occasionally.

      Combine Ingredients: While the pasta is cooking, slice the cooked chicken into strips. Once the pasta is al dente, stir in the basil pesto, cherry tomatoes, spinach, and the sliced chicken. Mix well until everything is coated in the creamy sauce.

        Add Cheese: Stir in the grated Parmesan cheese until melted and combined. Simmer for an additional 2-3 minutes, allowing the sauce to thicken slightly. Adjust seasoning with salt and pepper if needed.
