2 pounds fresh figs, stems removed and quartered

1 cup granulated sugar (adjust based on sweetness preference)

1/4 cup freshly squeezed lemon juice

1/4 cup water

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon (optional)

1/4 teaspoon salt

1 tablespoon balsamic vinegar (optional for depth of flavor)

Prepare the Figs: Rinse the fresh figs under cold water. Remove the stems and quarter the figs. Set aside in a bowl.

    Combine Ingredients: In a large pot or Dutch oven, combine the quartered figs, sugar, lemon juice, and water. If you're using balsamic vinegar and cinnamon, add those as well. Stir gently to combine the ingredients without crushing the figs too much.

      Cook the Mixture: Place the pot over medium heat. Allow the fig mixture to come to a gentle simmer, stirring occasionally. As the mixture heats up, the sugar will dissolve and the figs will start to break down.

        Simmer: Once simmering, reduce the heat to low and let the jam cook for about 30-40 minutes. Stir every 10 minutes to prevent sticking and ensure even cooking. You want the mixture to thicken; it should coat the back of a spoon.

          Test Consistency: After about 30-40 minutes, check the jam's consistency. If it's still runny, continue cooking until it thickens to your desired consistency.

            Add Vanilla: Once thickened, remove the pot from the heat and stir in the vanilla extract and salt. Taste the jam and adjust sweetness or acidity if needed.

              Cool and Store: Let the jam cool in the pot for about 15 minutes. Once cooled, transfer the fig jam into sterilized jars while still warm. Seal them with lids.

                Refrigerate: Allow the jars to cool completely at room temperature before transferring them to the refrigerator. The jam can be enjoyed after a few hours but reaches peak flavor after a day or two.
