4 boneless pork chops (about 6 oz each)

1 cup grated Parmesan cheese

1 cup breadcrumbs (panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 large eggs

1 tablespoon Dijon mustard

2 tablespoons olive oil

For the Roasted Carrots:

1 lb baby carrots (or regular carrots, peeled and cut into sticks)

2 tablespoons olive oil

1 tablespoon honey

1 teaspoon ground cumin

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Roasted Carrots: In a large mixing bowl, combine the baby carrots with olive oil, honey, ground cumin, salt, and pepper. Toss well to coat the carrots evenly. Spread them out in a single layer on one half of a large baking sheet.

      Set Up a Breading Station for the Pork: In a shallow dish, mix together the grated Parmesan cheese, breadcrumbs, garlic powder, dried oregano, red pepper flakes (if using), salt, and pepper. In another bowl, whisk together the eggs and Dijon mustard until well combined.

        Breadcrumb the Pork Chops: Dip each pork chop first into the egg mixture, allowing any excess to drip off, and then into the Parmesan-breadcrumb mixture, pressing firmly to adhere the crust. Place the breaded pork chops on the other half of the baking sheet (next to the carrots).
