Ingredients

2 cups of uncooked pasta (fusilli or penne work well)

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1/2 cup fresh basil leaves, chopped

1/4 cup balsamic glaze

1/4 cup extra virgin olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/4 teaspoon crushed red pepper flakes (optional)

4 small mason jars or containers

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Jar Ingredients: In a large mixing bowl, combine the halved cherry tomatoes, mozzarella balls, and chopped basil. Drizzle with the balsamic glaze, olive oil, salt, black pepper, garlic powder, and crushed red pepper flakes (if using). Toss gently to combine all ingredients well.

Assemble the Jars: Start by placing 1/2 cup of the cooked pasta in the bottom of each mason jar. Next, layer the tomato and mozzarella mixture evenly on top of the pasta until the jars are filled, leaving a little space at the top.

Add Additional Toppings: If desired, sprinkle extra chopped basil or a drizzle of balsamic glaze on the top layer for added color and flavor.

Seal and Store: Secure the lids on the jars and refrigerate until ready to serve. These jars can be made up to 2 days in advance.

Serve: When ready to eat, shake the jar gently to mix the ingredients, or transfer to a bowl for a more elegant presentation. Enjoy cold or at room temperature!
