Ingredients

4 cups fresh peaches, peeled and sliced

1 cup granulated sugar

1/2 cup brown sugar, packed

1/4 cup unsalted butter, melted

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1 cup rolled oats

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 cup chopped pecans or walnuts (optional)

1 cup yogurt or whipped cream for serving (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Peaches: In a large mixing bowl, combine the sliced peaches, granulated sugar, brown sugar, melted butter, lemon juice, vanilla extract, cinnamon, and salt. Toss gently until the peaches are well coated. Pour the mixture into a greased 9x13-inch baking dish.

Make the Topping: In another bowl, mix the rolled oats, flour, baking powder, baking soda, and chopped nuts (if using). Gradually stir in the melted butter until the mixture is crumbly and well blended.

Assemble the Casserole: Evenly sprinkle the oat topping over the peach mixture in the baking dish, covering the peaches completely.

Bake: Place the casserole in the preheated oven and bake for about 35-40 minutes, or until the topping is golden brown and the peaches are bubbly.

Cool & Serve: Remove from the oven and let it cool for a few minutes. Serve warm, optionally topping with yogurt or whipped cream for a delightful finish.
