Peach Chicken Salad Croissant

2 cups cooked chicken, shredded or diced

1 large peach, diced (or 1 cup canned peaches, drained)

1/2 cup Greek yogurt (or mayonnaise for a creamier texture)

1/4 cup celery, finely chopped

1/4 cup red onion, finely chopped

1/4 cup walnuts or pecans, roughly chopped (optional)

1 tablespoon honey

1 tablespoon Dijon mustard

Salt and pepper to taste

4 large buttery croissants

Fresh arugula or spinach leaves (for garnish)

Instructions
 

In a large mixing bowl, combine the shredded chicken and diced peach (or canned peaches).

    Add the finely chopped celery and red onion to the bowl.

      In a separate small bowl, whisk together the Greek yogurt, honey, Dijon mustard, salt, and pepper until well combined.

        Pour the yogurt dressing over the chicken mixture and stir gently until all ingredients are evenly coated. If using walnuts or pecans, fold them into the mixture at this stage.

          Taste the salad and adjust seasoning, adding more salt or pepper if desired.

            Slice each croissant in half horizontally, but don’t cut all the way through, creating a pocket.

              Place a handful of fresh arugula or spinach inside the croissant.

                Generously fill each croissant with the peach chicken salad mixture.

                  Serve immediately or refrigerate for up to 2 hours if preparing in advance.
