For the crust:

1 ½ cups graham cracker crumbs

⅓ cup unsalted butter, melted

¼ cup granulated sugar

1 cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream, chilled

For the peach layer:

3 ripe peaches, diced (about 2 cups)

2 tbsp freshly squeezed lemon juice

2 tbsp granulated sugar (adjust based on peach sweetness)

1 tsp cornstarch

Instructions
 

Prepare the crust:

    - In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until combined and crumbly.

      - Press the mixture firmly into the bottom of an 8x8 inch baking dish to form an even layer.

        - Refrigerate for about 15 minutes while preparing the cream layer.

          Make the cream layer:

            - In a mixing bowl, beat the softened cream cheese with a handheld mixer on medium speed until smooth and creamy.

              - Gradually add the powdered sugar and vanilla extract, mixing until thoroughly combined.

                - In a separate bowl, whip the heavy cream until stiff peaks form.

                  - Gently fold the whipped cream into the cream cheese mixture until well combined and fluffy.

                    Prepare the peach layer:

                      - In a medium saucepan over medium heat, combine the diced peaches, lemon juice, granulated sugar, and cornstarch.

                        - Cook for about 5-7 minutes, stirring gently, until the peaches are softened and the mixture thickens slightly. Remove from heat and let cool for 10 minutes.

                          Assemble the icebox squares:

                            - Spread the cream layer evenly over the chilled graham cracker crust.
