Ingredients

2 cups cooked brown rice

1/4 cup chia seeds

1/4 cup natural peanut butter

2 tablespoons honey or maple syrup

1/2 teaspoon vanilla extract

A pinch of salt

Toppings: sliced banana, berries, shredded coconut, or crushed nuts (optional)

Instructions

Prepare Rice: If you haven’t already, cook the brown rice according to package instructions and let it cool slightly.

Mix Base Ingredients: In a large mixing bowl, combine the cooked brown rice, chia seeds, peanut butter, honey (or maple syrup), vanilla extract, and a pinch of salt. Mix thoroughly until combined.

Form Rice Cakes: Using your hands or a spoon, scoop out about 1/4 cup of the mixture and shape it into a flat round cake, about 1/2 inch thick. Repeat this process until all the mixture is shaped into cakes and place them on a parchment-lined baking sheet.

Chill: Place the rice cakes in the refrigerator for at least 30 minutes to firm up. This helps them hold their shape better when serving.

Serve & Top: Once firm, remove the rice cakes from the fridge. Serve as is or add your favorite toppings like sliced banana, fresh berries, shredded coconut, or crushed nuts for added flavor and texture.

Enjoy: These peanut butter chia rice cakes can be stored in an airtight container in the fridge for up to a week. Enjoy them as a healthy snack or breakfast option!
