Pesto Chicken Mozzarella Melts

2 cups cooked chicken, shredded or diced

1/2 cup basil pesto (store-bought or homemade)

1 cup fresh mozzarella cheese, sliced

1/2 cup grated Parmesan cheese

1/2 cup sun-dried tomatoes, chopped (optional)

1/4 cup fresh basil leaves, chopped (for garnish)

4 large hoagie rolls or French bread subs

2 tablespoons olive oil

Salt and pepper, to taste

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken Mixture: In a large bowl, combine the shredded chicken, basil pesto, sun-dried tomatoes (if using), salt, and pepper. Mix well until the chicken is evenly coated.

      Prepare the Rolls: Split the hoagie rolls or French bread subs lengthwise without cutting all the way through and place them on a baking sheet. Drizzle the inside of each roll with olive oil.

        Fill the Rolls: Take a generous portion of the chicken mixture and stuff it into each roll. Top each with slices of fresh mozzarella cheese and a sprinkle of grated Parmesan cheese.

          Bake: Place the baking sheet in the preheated oven and bake for about 15-20 minutes or until the cheese is melted and bubbly and the edges of the rolls are lightly toasted.

            Garnish and Serve: Remove from the oven and let cool slightly. Sprinkle with fresh basil leaves for garnish. Serve warm and enjoy your delicious Pesto Chicken Mozzarella Melts!
