Pumpkin Cinnamon Roll Waffle Bites

1 cup all-purpose flour

1/4 cup brown sugar

2 tsp baking powder

1/2 tsp cinnamon

1/4 tsp nutmeg

1/8 tsp salt

1/2 cup canned pumpkin puree

1/3 cup milk

1/4 cup vegetable oil

1 large egg

1 tsp vanilla extract

1/4 cup pecans or walnuts, chopped (optional)

1/4 cup cream cheese, softened (for glaze)

1/2 cup powdered sugar (for glaze)

1-2 tbsp milk (for glaze)

Extra cinnamon and sugar mixture (for topping)

Instructions
 

In a large mixing bowl, whisk together the flour, brown sugar, baking powder, cinnamon, nutmeg, and salt until well combined. Set aside.

    In another bowl, mix the pumpkin puree, milk, vegetable oil, egg, and vanilla extract. Whisk until smooth.

      Pour the pumpkin mixture into the dry ingredients and stir until just combined. If you’re adding nuts, fold them in gently at this stage.

        Preheat your waffle maker according to the manufacturer's instructions. Lightly grease the waffle plates with cooking spray to prevent sticking.

          Once the waffle iron is heated, pour about 2-3 tablespoons of batter onto the center of each waffle section (adjust based on your waffle maker size). Close the lid and cook for about 3-5 minutes, or until golden brown and cooked through. Repeat with the remaining batter.

            While the waffle bites are cooking, prepare the glaze. In a small bowl, combine the softened cream cheese, powdered sugar, and 1 tablespoon of milk. Mix until smooth, adding more milk as needed to achieve a drizzle-like consistency.

              Remove the waffle bites from the waffle maker and transfer them to a serving plate. While they are warm, drizzle with the cream cheese glaze and sprinkle with a cinnamon and sugar mixture.
