Ingredients
  

2 cups rolled oats

1 cup pumpkin puree (not pumpkin pie filling)

1/2 cup almond butter (or any nut/seed butter of your choice)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup dried cranberries or chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, almond butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well combined.

      Combine Dry Ingredients: In another bowl, mix the rolled oats, cinnamon, nutmeg, and salt. If you're adding nuts or dried fruits, include them in this step.

        Combine the Mixtures: Gradually add the dry ingredients into the wet ingredients, stirring until everything is well incorporated. The mixture should be sticky but manageable.

          Form Clusters: Using your hands or a spoon, scoop out portions of the mixture and form clusters (about 2-3 tablespoons each) on the prepared baking sheet. Leave space between each cluster as they will expand during baking.

            Bake: Place the baking sheet in the oven and bake for 15-20 minutes, or until the clusters are golden brown around the edges. They may appear soft, but they will firm up as they cool.

              Cool Down: Remove the baking sheet from the oven and let the clusters cool completely on the baking sheet. They will harden as they cool.

                Store: Once cooled, enjoy immediately or store in an airtight container for up to a week. These clusters can also be frozen for longer storage.
