1 cup rolled oats

1/2 cup pumpkin puree

1/4 cup almond butter

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

1/4 teaspoon salt

1/4 cup dark chocolate chips (optional)

1/4 cup chopped nuts or seeds (such as walnuts or sunflower seeds)

Instructions
 

In a large mixing bowl, combine the rolled oats, pumpkin puree, and almond butter. Mix until well combined.

    Add in the honey (or maple syrup), vanilla extract, pumpkin pie spice, and salt. Stir until all ingredients are evenly mixed.

      If using, gently fold in the dark chocolate chips and chopped nuts or seeds until they are evenly distributed throughout the mixture.

        Refrigerate the mixture for about 30 minutes to firm it up, making it easier to handle.

          Once chilled, use your hands to form small balls (about 1 inch in diameter) from the mixture. Place each ball on a parchment-lined tray.

            After forming all the bites, you can roll them in extra pumpkin pie spice or shredded coconut for added flavor and texture, if desired.

              Store the energy bites in an airtight container in the refrigerator for up to a week, or freeze them for longer storage.
