2 cups rolled oats

1 cup raw pumpkin seeds (pepitas)

1/2 cup chopped walnuts

1/2 cup shredded coconut (unsweetened)

1/4 cup honey (or maple syrup for a vegan option)

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

2 teaspoons pumpkin pie spice

1/2 teaspoon cinnamon

1/2 teaspoon salt

1 cup dried cranberries or raisins (for sweetness)

1/2 cup chocolate chips or butterscotch chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (163°C) and line a large baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, pumpkin seeds, chopped walnuts, shredded coconut, 2 teaspoons of pumpkin pie spice, cinnamon, and salt. Stir until well combined.

      Prepare Wet Ingredients: In a separate small bowl, whisk together the honey (or maple syrup), melted coconut oil, and vanilla extract until smooth.

        Combine Ingredients: Pour the wet mixture over the dry ingredients and stir gently to ensure everything is evenly coated. You want the mixture to be sticky but still chunky.

          Form Clusters: Using your hands, press the mixture firmly into clusters on the prepared baking sheet. Ensure they are compact so they hold together while baking.

            Bake: Place the baking sheet in the preheated oven and bake for about 25-30 minutes, stirring halfway through to promote even browning. Keep an eye on it toward the end to prevent burning; you want them golden brown.

              Cool the Granola: Once baked, remove the granola from the oven and let it cool completely on the baking sheet. As it cools, it will become crispy and hold together.

                Add Dried Fruit and Chocolate: Once cooled, fold in the dried cranberries or raisins, and if using, the chocolate chips.

                  Store: Transfer the granola clusters to an airtight container. They can be kept at room temperature for up to 2 weeks.
