1 lb ground beef (90% lean)

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 can (8 oz) tomato sauce

2 tbsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

½ tsp salt (to taste)

½ tsp black pepper (to taste)

¼ tsp cayenne pepper (optional, for added spice)

1 cup beef broth (or water)

2 tbsp olive oil

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Shredded cheese (for serving)

Instructions
 

Sauté the Vegetables: Heat olive oil in a large pot over medium heat. Add the diced onion and bell pepper. Sauté for about 3-4 minutes until the onion is translucent. Add minced garlic and cook for an additional minute until fragrant.

    Brown the Beef: Push the veggies to the side of the pot and add the ground beef. Cook until browned, breaking it up with a spatula, about 5-7 minutes.

      Add the Spices: Stir in the chili powder, cumin, smoked paprika, salt, black pepper, and cayenne pepper (if using). Cook for about 1-2 minutes to toast the spices.
