1 lb boneless, skinless chicken breasts

2 cups cherry tomatoes, halved

1 cup heavy cream

1 cup fresh basil leaves, chopped

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper, to taste

3 cups cooked rice or quinoa (for serving)

Grated Parmesan cheese, for garnish

Prepare the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and let it rest for a few minutes before slicing.

    Sauté the Tomatoes: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the halved cherry tomatoes and cook for 3-4 minutes until they soften and release their juices.
