1 large whole wheat tortilla

1/2 cup red beet hummus

1/2 cup carrot hummus

1/2 cup spinach hummus

1/2 cup purple cabbage, finely shredded

1 medium carrot, julienned

1 small cucumber, julienned

1/2 avocado, sliced

1/2 bell pepper (any color), sliced

Fresh cilantro or parsley, for garnish

Salt and pepper to taste

Optional: Lemon juice for a zestier flavor

Prepare the Hummus: If using store-bought hummus, get the red beet, carrot, and spinach hummus varieties. If making your own, blend cooked beets, carrots, and spinach with tahini, olive oil, lemon juice, and garlic for natural flavoring and color.

    Lay Out the Tortilla: Place the whole wheat tortilla flat on a clean surface or a plate. This will be your wrap's base.

      Spread the Hummus: Using a spatula or the back of a spoon, spread the red beet hummus evenly over the left third of the tortilla.

        Add the Second Hummus Layer: On the middle third of the tortilla, spread the carrot hummus in an even layer, followed by the spinach hummus on the right section, creating a vibrant rainbow effect.

          Layer the Veggies: On top of the hummus, begin layering the shredded purple cabbage to create a crunchy texture. Next, add the julienned carrots and cucumbers, followed by avocado slices and bell pepper strips.
